Good advice above.
The system we have built for my track project is a proper oil condenser. This one has been built as a bespoke item with internal pipework to ensure the oil in aerosol suspension from the cam cover breathers is delivered to the bottom of the tank. This ensures the PiperCross filter on the top isn't overwhelmed by oil vapour. There is a drain plug which needs to be checked regularly to ensure there is no build up of oil in the tank.
I think Blitz do a baffled catch tank but I'm not sure it has the internal pipework. A bit of Googling might reveal more info or identify a suitable off-the-shelf design.
I posted a pic of a very similar system on a roadgoing GT-Four recently. It looks nice with the stainless Aeroquip but we decided to standardise on the black woven pressure hose with the track project as it is possible to bend the hose around the bodywork much more easily than Aeroquip. Practicality over looks!
